An intense chocolaty profile with alternating flavours of fresh nuts and dried flowers such as chamomile, rose and citronella. Pleasant herbal and woody notes and a delicate presence of red fruits add another layer of flavours.
The Dominican Republic is one of the main producers of organic cacao in the world. Zorzal cacao grows in the Cibao Valley, where the soil is rich and fertile, the climate is favourable and well protected by the Septentrional Mountain Range.
The first time Charles Kechner came to the Dominican Republic he was a Peace Corps volunteer and helped cacao farmers to apply agroforestry techniques. He then went on to have a scientific career in nature conservation and reforestation. In 2012 he decided to combine his passion for cacao, nature conservation, and the Dominican Republic: he bought a 50 hectares cacao farm, built a fermentation centre, and established partnerships with neighbouring smallholder farmers. The mission of Zorzal is to demonstrate that it is possible and economically viable to produce fine flavour cacao and restore and protect the natural environment at the same time. We share Charles' dream of restoring landscapes and biodiversity, while giving farmers the opportunity to earn a decent income with speciality cacao.
